Butternut Squash Soup Recipe

Even my teens that claim to “hate squash” love this soup! It’s a crowd pleaser and it’s nourishing and warming as the weather gets chilly.

Soup Ingredients:

  • 1 small butternut squash seeded, peeled and chopped

  • 2 medium carrots chopped

  • 1/2 onion chopped

  • 2 medium cloves garlic minced

  • 1 teaspoon sea salt (or to taste)

  • 5 cups water or broth

  • 1 Tablespoon Curry Powder

    • Directions: Combine all ingredients in your InstantPot or cooking pot of choice and cook on “soup” mode or bring to a boil in a pan and simmer until veggies are soft.

While soup is cooking, make Cashew Cream.

Cashew Cream Ingredients:

  • 1/2 cup raw cashews

  • 1/2 cup water

  • Dash of salt

    • Directions: Blend cashews, water and salt until smooth, and pour half of it into a small container to use as a garnish. (I use a Vitamix but any blender should work.)

  1. When soup is done, transfer it to blender (in batches if needed) and blend until smooth. (I leave the cashew cream remnants in the blender because I love the creamy taste of it mixed with the soup.)

  2. Pour into bowls and garnish with a drizzle of cashew cream you set aside. And if you want to make it look pretty , take a toothpick and zigzag back-and-forth through it.

  3. Add some chopped roasted and salted cashews or any nuts or even fresh herbs just to give it a little texture.

  4. Serve with your favorite fresh, warm bread - Yum Yum!
