Miso Soba 🍜 Noodle Soup

Yummy, warm, nourishing noodle 🍜 soup is so good in winter. 😌

Miso Soba 🍜 Noodle Soup

Ingredients:

  • 1 Tablespoon miso paste (mixed in 1/4 cup warm water)

  • 2 cups water

  • 1/2 lb tofu

  • 1 carrot julienned

  • 1 clove garlic minced

  • 1 package soba noodles

  • 1 sheet nori

  • 1 stalk wakame seaweed

  • T tablespoon tamari (or soy sauce)

Instructions:

  1. Soak wakame in water for 5 minutes.

  2. Cook soba noodles according to package.

  3. Boil water in a medium sized pan. Add carrots and garlic. Simmer 5 minutes. Turn off. Add miso and tamari.

  4. Add noodles to bowl, and miso broth from pan.

  5. Chop reconstituted wakame and add to bowl.

  6. Tear nori into squares and garnish.

(If I had them, I would’ve added sliced green onions too!)

Eat with chopsticks 🥢 and a spoon.
