Roasted Tempeh Salad with Balsamic Vinaigrette

With that, here's a yummy recipe for ya!

INGREDIENTS

  • Roasted Tempeh - 1 package of your favorite tempeh (fermented soy is super good for you!)  
  • Avocado oil
  • Granulated garlic
  • Cayenne pepper
  • Honey
  • Sea salt or Veggie Salt 
  • Avocado
  • Sunflower seeds

Balsamic Vinaigrette Dressing

  • 1/2 cup olive oil

  • 1/4 cup balsamic vinegar
  • 1 cloves garlic minced
  • 3 drops lemon vitality
  • 1-2 teaspoon raw honey
  • 1/4 teaspoon each dry basil & oregano, salt, and pepper to taste

SALAD PREP

  1. Make your favorite green salad  -- I love spinach, red leaf lettuce, carrots, cucumber, sunflower sprouts, etc.
  2. Cut tempeh into little squares 
  3. Add a little avocado or your favorite oil to cook with to a pan (I use a cast iron skillet) then add tempeh to pan and stir around
  4. Add spices, honey and salt and cook tempeh over medium heat, stirring often for 5-8 minutes or until browned a little
  5. Add dressing to salad and top with roasted tempeh, sunflower seeds & avocado
